Local foundation,
international accents.
We source most of our ingredients from Czech suppliers, bakeries, dairies, fishermen, and breeders whom Maroš knows personally and has worked with for years.
We bring in foreign ingredients only where Czech production falls short — not for effect, but because the dish calls for it.
Bakeries & grains
Šumava rye bread, milk bread
We serve Šumava rye bread and thyme milk bread with cultured butter. An in-house bakery for every menu — bread is the first course to greet the guest, so we give it our full attention.
Cheese & dairy
Heřmanice white-mold cheese.
We serve Heřmanice white-mold cheese as an additional course with apple balsamic, black truffle, and malt bread. Olomouc cheese appears in the gougère of the amuse-bouche.
Freshwater fish & caviar
Arctic char, catfish, caviar.
Freshwater fish from farms in South Bohemia and Moravia. Cured char with horseradish, catfish with Hrob nduja and oscietra caviar — courses where the purity of the ingredient is everything.
